I've just written a blog post about various ways of fastening on; anchoring stitch won't work on counted fabric, I think, but all the others do :-)

What I have done in the past instead of a waste knot is to put the thread through from the front as if I was making a waste knot but I bring the thread back up to the side of the long end and then take the Thread back over the long end almost like a half cross stitch. Then start stitching the design as if I was using a knot.
This means at the end of stitching I can slip this 'away stitch' undone and thread the end through the back of the stitching.
