Your very best recipe

Would you like to share your very best recipe? :D
Mine is a Lemon Cake. I made so many of them as the family thinks that it is the best cake ever!

LEMON DRIZZLE CAKE

You will need a loaf tin, size approx.3.5” x 4.5” x 3” deep.

INGREDIENTS :
4oz of margarine or butter
8oz self raising flour
6oz of caster sugar
2 eggs
1/4 teaspoon of salt
The grated rind of one lemon
8 tablespoons of sweetened milk (just add 1 dessertspoonful of sugar to the milk)

For the topping, put the juice of the lemon in a jug and add granulated (or caster) sugar until it becomes a paste to pour on the cake

METHOD :
Preheat the oven, gas Mark 4
Cream the butter or margarine and sugar together
Beat in the eggs one at a time
Mix in flour and remaining ingredients (salt, grated rind and sweetened milk)
Bake in moderate oven, on the middle shelf (4th from the top) for 1 hour approx. gas mark 4.
Remove the cake from the tin, then pour the topping over it.
Cool on a wire rack.

PS : I often double the quantity to make 2 cakes at once.

It's faded into obscurity now.

I love Lemon Drizzle Cake...one of my favourites! :D

BBC Good Food quick lamb biryani. Google it. It cured a bad dose of the flu in one sitting (I ate the whole lot - it serves 4 :oops: :bandaid: :dance:)

BBC Good Food recipe by Simon Rimmer, Butter Chicken. Not one if you are on a diet, but its seriously tasty.

Glad it cured your flu! :D I have printed it. It sounds so easy. Some people have added peas, garlic and onions to it.

Spaghetti Bolognaise:

To serve 4.
About 1/3 to 1/2lb (175 to 250g) lean beef mince. Brown off in a saucepan. While this is doing, prepare the rest:
1 Onion, peeled & chopped.
3 medium sized mushrooms, chopped.
4 Frankfurters, chopped into 1/2" (1.5cm) lengths. We prefer the 'Herta' brand.
1 Pepperami, chopped into 1/8" (3mm) lengths.
Set saucepan of water for spaghetti to boil.
Drain excess fat off mince once browned and add above ingredients, also adding the following:
1 Beef Stock Cube (Oxo in the UK)
1 Teaspoon Mixed Herbs
1 Teaspoon 'Italian Seasoning'
1/2 small jar/bottle (1/4pt/150ml) of the cheapest, most vinegary Tomato Ketchup you can find.
About 4" of Tomato puree from a tube.
Add about a tablespoon of Worcester sauce & brown sauce if you want.
Add water to make sufficiently liquid and set to boil. When it comes to the boil, simmer until the spaghetti is done.
Use about a pound (450g) of spaghetti.

Takes about 20 mins, start to finish and gives a massive taste explosion in the mouth, catering for sweet (Tomato Ketchup), sour (the vinegary ketchup), salt (stock cube) and umami (stock cube & beef) along a with a lovely spicy & smoky flavour from the frankfurters & pepperami. Furthermore, we reckon it costs, using reasonable quality beef, about £3 for the meal, so approx. £0.75 ($1) per head.

Loads - I love cooking :-). But this is one I'll be making tonight, and which I always make in "freezer quantities" (meaning DH and I have it when I cook it, and then three meals-for-two go in the freezer for Sunday evenings after the evening service)

SMOKY CHILLI CON CARNE
* Make a chilli paste from 4 tbsp tomato puree, 4 tsp mild smoked paprika, 2 tsp hot smoked paprika, 2 tbsp vinegar, 2 tsp sugar and 2 tsp salt. Leave to stand.
* Fry 2 large chopped onion and 4 chopped peppers (not green) until softened and browned. Add 8 chopped rashers of good quality smoked streaky bacon and 100g chopped dry sausage (e.g. chorizo) and fry until crisp. Add 750g beef mince and fry until browned. Stir in the chilli paste and 2 tins chopped tomatoes. Cover and simmer for 10 mins. Stir in 2 tins kidney beans and 1 small tin sweetcorn, cover and simmer for another 20 mins.

Tonight I'm trying black beans instead of kidney beans, just to ring the changes.
