How do I fasten the thread when I use a single strand?

I know how to do the loop thing but that only works with the two strands, when I'm back stitching it is one strand and I don't know how to fasten it when I start.

You could use an 'Away Waste Knot' as described here: http://www.scarletquince.com/waste_knot.php
Or a pinhead stitch which can be on linen or aida: http://www.scarletquince.com/pinhead_linen.php or http://www.scarletquince.com/pinhead_aida.php

I run the tail under a few stitches, leaving it long, and then catch it in the back stitches. For ending, I run it under stitches as usual.

I use waste/away knots as Richard mentioned. The thread-under method that Debby described is also widely used. It mostly depoends on whether you want to flip your work to anchor the tail.

If you're backstitching, there are likely full stitches in a area to tuck the tails under.
